To prepare the Pico De Gallo, combine the diced tomatoes, red onion, jalapeño pepper, minced garlic, chopped cilantro, lime juice, olive oil, and a pinch of salt, and pepper in a small bowl. Mix well and set aside. It tastes better when all of the flavors have a little time to marinate together at room temperature.

When the fish is done then prepare the avocado. Cut the avocados in half, remove the pit, and dice the flesh. Add the diced avocado to the pico de gallo mixture. Mix gently so that the avocado doesn’t get mushy. You can either substitute the avocado with mangos for the perfect compliment of sweet and savory that mango salsa would add to the dish. Or add mango and avocado to the pico for a mango avocado salsa

Your Pico de gallo is ready to be served with Cajun Salmon or any other dish of your choice!

  • 1-2 tomatoes seeded and deveined
  • 1/2 onion, diced
  • 1/2 jalapeno pepper, diced seeded and deveined
  • 1 handfull cilantro, chopped
  • 1/2 lime
  • 1 tsp olive oil
  • salt and pepper

Extra Ingredients

  • 1/2 avocado, cubed
  • 1/2 cup cubed mango


  • Chop the onion, onion, and jalapeno into small pieces and add to a bowl
  • Finely chop the cilantro and add to the tomato mixture
  • squeeze the juice from 1/2 lime and a drizzle of olive oil into the tomato mixture
  • salt and pepper to taste
  • Mix well, and let sit at room temperature for about 30 minutes to allow flavors to mell.


The extra ingredients are two options to add to the pico de Gallo for additional flavor.
