When the fish is done then prepare the avocado. Cut the avocados in half, remove the pit, and dice the flesh. Add the diced avocado to the pico de gallo mixture. Mix gently so that the avocado doesn’t get mushy. You can either substitute the avocado with mangos for the perfect compliment of sweet and savory that mango salsa would add to the dish. Or add mango and avocado to the pico for a mango avocado salsa

  • 1/2 avocado, cubed
  • 1/2 cup cubed mango

Instructions

  • Chop the onion, onion, and jalapeno into small pieces and add to a bowl
  • Finely chop the cilantro and add to the tomato mixture
  • squeeze the juice from 1/2 lime and a drizzle of olive oil into the tomato mixture
  • salt and pepper to taste
  • Mix well, and let sit at room temperature for about 30 minutes to allow flavors to mell.
