Whether you’re heading to a backyard bash or hosting your own star-spangled soiree, these patriotic picks will keep everyone coming back for seconds.

1. Red, White & Blue Berry Salad

A show-stopper on any table! This is such a simple salad. Just toss together any combination of strawberries, raspberries, blueberries, and blackberries. On the side add some fruit dip (equal parts softened cream cheese and marshmallow fluff)

2. Dill Pickle Potato Salad

A new twist on an old classic. My recipe has chicken in it or a summer dinner idea but you can leave the chicken out and bring the potato salad to your 4th of July celebration. You can find the recipe HERE.

3. Grandma’s Cucumber Salad

My Grandma’s Cucumber Salad is super simple but you can “spice it up” by adding slivered red onions and/or some red pepper flakes for a “Firecracker” salad that everyone is sure to enjoy. Find the recipe HERE

4. Simple and Light Shrimp and Pasta Salad

5. Summer Pasta Salad

This is a cheesy pasta salad with an amazing tomato salsa topping. It’s probably my favorite summer dinner recipe. Serve some crusty french bread with it and it’s a perfect warm day meal. It’s also a sure crowd-pleaser salad for a party. You can find the recipe HERE.

6. Brussels Sprout and Pomegranate Slaw

Brussels Sprout, Pomegranate and Parmesan Salad

A slaw like salad. The pomegranate give this savory salad just the right amount of sweet.

Ingredients

  • 1 pound brussel sprouts, shredded
  • seeds from 1/2 pomegranate
  • 1/4 cup shredded parmesan cheese
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • juice of one lemon
  • 1 tsp sea salt
  • 1/4 cup roasted slivered almonds, for garnish

Instructions

  • Mix all ingedients together except for the almonds
  • serve salad and garnish with almond slices and additional parmesan

Notes

I used my Quisinart shredding blade for my Brussel sprouts and it makes a pretty fine slaw. You can also grade with a hand grader or chop with knife to make a more coarse salad.
I personally find that the easiest way to get pomegranate seeds out of the fruit is to cut in half (equator cut) and soak it in water for a little bit. Then I manually peel the seeds out of the rind into the water. I use a fine food strainer to get any floating rind out of the water. I used 1/2 of the seeds for my salad and I plan to use the other 1/2 for a fun fall cocktail.
