Prosciutto Caprese Salad with a Gourmet Twist

This is a lunch favorite in my house. Keeping these few simple ingredients on hand makes it a quick salad to put together.

Adding some cherry tomatoes, mozzarella, kalamata olives, and prosciutto to fresh salad greens can create the most amazing prosciutto caprese salad. Just add some bottled balsamic vinegar dressing.

Caprese Salad

A traditonal caprese salad is just tomatoes, mozzarella and basil with a balsamic and olive oil dressing.

I’ve turned it into a refreshing lunch salad that is delicious, low carb, and so easy to make.

Ingredients

  • 4 cups mixed greens
  • 1 tbsp fresh basil chopped fine
  • 1/2 6 oz. pkg., of prosciutto cut into bite sized pieces
  • 10 Ciliegine mozzarella balls cut in half
  • 10 cherry tomatoes cut in half
  • 2 tbsp sliced kalamata olives
  • 3 green onions, sliced very fine
  • bottled balsamic vinegarette dressing I like Trader Joe's brand

Instructions

  • Mix the greens with all the remaining ingredients
  • Use as much dressing as is appropriate for you. I use 1 tablespoon.

Other Options

If your not a fan of some of the ingredients, here are a few alternative suggestions that you can use as substitutes or add to the existing recipe:

  • Sliced Turkey, Salami, Ham or Chicken
  • Green or Black Olives
  • Feta Cheese or Blue Cheese
  • Fresh Thyme or Rosemary
  • Hearts of Palm or Artichoke Hearts
  • Italian, Ranch, or Raspberry Balsamic Dressing

Prepping for Lunch

Salad for lunch is my go to but it only seems to work if I have all the ingredients on hand and prepped. I spend a little time on Sunday washing my lettuce and vegetables and chopping everything up. Then I store it in glass containers. This makes putting salads together a snap during the week.

Not Just for Lunch

I’ve been on a health journey the last few months. I’m feeding my body with more protein and limiting carbs. Portion control has also been a game changer. I love pasta and I don’t deprive myself of it, I just eat smaller portions.

Salads have become a big part of my meal planning and not just for lunch. If “Handy” wants a steak for dinner, I put my cut up steak on a salad and it’s delicious.
