Green Onion – Lime Rice

Ingredients
Rice
- 1 cup long grain white rice
- 2 cups water
- 1 tbsp butter
- 1 tsp salt
Medley
- 1 cup cherry tomatoes halved
- 6 green onions, thinly sliced
- 2 ears of corn
- 1 tbsp sugar
- 1 lime
Instructions
Rice
- Add rice, water, butter, and salt to a medium saucepan. Bring to a boil over medium-high heat. Cover and reduce to simmer. Cook for 25 minutes without taking the lid off the rice.
Corn
- While rice is cooking boil water in a medium stock pot. Add sugar to the water. When the water is boiling, add the corn for 3 minutes and then remove it.
- When cool enough to work with, cut the corn kernels from the cob
Medley
- In a bowl, combine the sliced tomatoes, green onions, rice, corn, and juice or one lime. Toss gently. Salt & Pepper to taste
