Add olive oil to a cast iron skillet and heat on medium-high
Add the chopped shallots and sauté until translucent, add the garlic and cook for about 1 minute until fragrant. Add the tomatoes and spices and let cook, stirring often for about 10-15 minutes until the tomatoes are bursting.
Add the vinegar to the skillet and simmer for a few minutes while stirring and well combined. Take off the heat.
Pasta
While the tomatoes are cooking down, bring a large pot with water and salt to a boil. Add the pasta and cook for 4 minutes.
Drain the pasta in a colander
Assemble
Add the pasta to a pasta bowl, add the sauce, and toss until the pasta is covered. Garnish with mozzarella balls, fresh basil strips, and parmesan cheese.
