On September 17th we had our first egg. I had a funny feeling that something was going to happen. The girls were especially noisy and Michelle was missing (turns out she was in the nesting box). I checked a few hours later and there it was…our first egg. We scrambled it up on Saturday and each of us had a taste. There is a noticeable difference from store bought eggs. The yolks are darker in color and have a creamier taste. It’s like butter! We have also noticed that when we make poached eggs the stay nice and round – bonus!
We didn’t get another egg until about a week later and it was HUGE. I was a little concerned for Michelle but she seemed to be OK. When we went to open it up (expecting a double yolk) we were very surprised to find a complete egg (shell and all) inside of the egg. Craziest thing I’ve ever seen.
